I’ve just arrived home from the most hectic weekend imaginable ~ one full day in Stockholm, then 8 hours in Helsinki, with not much sleep in between ~ I’m sufficiently wiped out and could sleep for a week. But, and you should all know my tummy by now, I’m hungry. Scavenging around the refrigerator for whatever it was I managed to buy between dining out last week, I managed to find some essentials and yes! God bless chorizo, the meat that lasts forever and a lifetime!

So after a nice long shower (there’s nothing like a hot shower after a weekend of travelling – actually no there is. There is the hot shower after a week of music festivalling), I threw together this chorizo salad with sundried tomato and peppers, a tasty warm salad that literally takes five minutes to prepare.

Plus it tastes about ten gazillion times better than that shite they serve on British Airways.

Chorizo salad with sundried tomato and peppers
140grams chorizo, chopped (my choice: as spicy as they come!)
Mixed leaves (my choice: spinach, rocket)
1 medium yellow pepper, sliced
1 medium onion, sliced in 1cm slivers
Sundried tomato
Sundried peppers
1teaspoon olive oil
  1. Place mixed leaves on serving plate and layer with sliced yellow pepper, sundried tomatoes and sundried peppers.
  2. Heat olive oil in small saucepan and add onions. Sautee on medium to low heat until brown, but still retaining texture.
  3. Add sliced chorizo and continue stirring on medium heat, until chorizo is warmed and (now I get technical) the flavours start oozing.
  4. Serve over prepared salad.
Serves 2.
