Some time last year, I made the ugliest matcha cupcakes ever. It’s ok, I’m man enough *grunt* to admit I make ugly stuff. I mean, did y’all just click on that link to check it out? I’m sure you did, because if there is something people love more than looking at beautiful things, it’s gawking at the hideous things in life.

This Is A Fact.

Just look at that weird, sandy textured frosting. What was up with that? And that horrid lighting. Honestly, I think I was on drugs posting that and truth be told, I didn’t even like that recipe all that much. It was way more cocoa than matcha and in fact all that was matcha about it was the frosting.

So since last October, I’d been meaning to devise a matcha cupcake recipe of my own. And because matcha is the best of buddies with white chocolate, I thought I’d go all kinds of crazy and do a matcha and white chocolate cupcake!

Oh yes, it’s like Christmas, all in an itty bitty pint-sized cupcake ๐Ÿ˜‰

Marrying my two favourite ingredients seemed an inevitable fate, and this isn’t the first time it’s happened. It’s not evenย the second!ย I’ve been in love with Green & Black’s white chocolate with Madagascan vanilla since forever and honestly, you should try it.

I was on cloud nine when Green & Blacks personally dropped a handful of blocks off at my house but I can promise you, I’m not just saying they rock because y’know, they gave me free stuff. I genuinely love this product and really, there is not much to unlove about the rich block of chocolate, housing within its creamy smooth body hundreds of dancing vanilla pods who are, I’m sure, very happily drunk in white chocolate heaven.

And then there’s teapig’s matcha powder. Matcha rocks. Need I say more?

So anyway, here you go. Severely delayed but I’ve made some matcha and white chocolate cupcakes! These cupcakes were meant to be matcha with white chocolate chunks, covered in a cream cheese frosting but I got a little carried away and decided to make some matcha chocolate and top my cupcakes with a lovely green splodge.

Not sure if it necessarily works aesthetically but it was yum!

ps. I think I’m gonna win the award for Worst Food Stylist Person Thing ever. I mean, who the hell eats cupcake with chopsticks?!

Matcha and white chocolate cupcakes
Cupcake:
120 grams plain flour
140 grams caster sugar
1 1/2 teaspoon baking powder
40 grams unsalted butter at room temperature
120mL whole milk
1 egg
2 1/2 teaspoon matcha powder
70 grams white chocolate, chopped up

Cream cheese frosting:
300 grams icing sugar, sifted
50 grams unsalted butter at room temperature
125 grams cream cheese, cold

Matcha chocolate topping (totally optional):
100 grams white chocolate
1 teaspoonย matcha powder

  1. Preheat the oven to 170ยฐC/325ยฐF.
  2. Put the flour, sugar, baking powder and butter in a bowl and beat on low speed until you get a sandy consistency and everything is combined.
  3. Gradually pour in the milk and beat until just incorporated.
  4. Add the egg to the flour mixture and continue beating until just incorporated.
  5. Add matcha powder and continue mixing for a couple of minutes until the mixture is smooth.
  6. Stir in white choc, leaving a little bit to sprinkle on top.
  7. Spoon the mixture into the paper cases until 2/3 full then sprinkle remaining white choc on top.
  8. Bake in pre-heated oven for 20-25 minutes or until the sponge bounces back when touched. A skewer inserted should come out clean. Leave to cool before frosting.
  9. For the frosting, beat the icing sugar and butter together with an electric mixer. on medium-slow speed until the mixture comes together and is well mixed.
  10. Add the cream cheese in one go and beat until it is completely incorporated. Turn the mixer up to medium-high speed.
  11. Continue beating until the frosting is light and fluffy, at least 5 minutes. Do not overbeat, as it can quickly become runny.
  12. Spread evenly on top of cupcakes and let set.
  13. For the matcha chocolate topping, melt 100 grams of white chocolate in a bowl over a simmering pot of water. When the chocolate is dissolved, stir in matcha powder. Spread on cupcakes immediately and let set.
Makes 12-15 cupcakes.

I once had a matcha genoise which was so delicious. Not to sweet and ever so fluffy. I wish I could get my hands on that recipe!

  32. I’ve made these twice and both times have turned out disastrous
    Not that your recipe is bad; it’s coz I’m trying to be smart and using self raising flour + bicarb soda, hence they turn out concave! Truly uglier than your original green tea cupcake recipe
