I want to let you in on a little fact. It’ll either make you love this banana cake recipe, or well, make you not love it but here it is: this recipe contains condensed milk. And because I could more than happily sustain life by injecting condensed milk directly into my blood stream, this fact means that I Absolutely Love This Recipe and also because I do believe sharing is caring, here I am sharing it with you.
My mum’s banana cake recipe.
As you can imagine, this recipe has been honed to laser perfection over the years. It’s unique not only because it uses condensed milk *nom* but also includes the juice of an orange, resulting in seriously the moistest, softest, most scrumptious banana cake you’ll ever have.
My mum usually bakes them in two loaf tins, but I’m sure you can also make it in one round tin if you so please π
And I pried the recipe away from her little hands just to share with you. See how much I love you guys? π

ps. For those of you orange haters out there (which kinda sorta includes me, I don’t like orange flavoured cakes, especially with chocolate!), you can’t taste the orange juice in this recipe. It just makes it moister!

Just made this cake for my daughter and I must say IT IS one fo the MOST MOIST Banana Cake i’ve ever tried! Perfect! Your mom really rocks!
PS: I think the sugar needs to be adjusted based on the sweetness of the bananas, in my case they were very sweet so will need to reduce even more.

i am planning on making this tomorrow because it looks delicious, but only have two sad brown bananas to use. Just wondering what size loaf tin you bake it in so I can halve the recipe and use a tin half the size?

The loaf tins we used were 8.5 x 4.5 x 2.5 inches – with this recipe we use TWO loafs tins so with half the recipe (ie your two sad bananas π ) you can just use one loaf tin. Hope that helps!

Just made this very moist banana cake but used “caramel condensed milk” and it turned out absolutely scrumptious. I baked the cake in my new round silicone baking pan which doesn’t need greasing which is so convenient to use, especially for this lovely cake. Thank you.

I made this cake last week, the only changes I made were baking time (took aaaages in a round tin) and I sprinkled the top with granulated brown sugar before baking. It was amazing. My husband who doesn’t normally like cake was arguing over the last bit and all in all it was a great success. I am going to be making this cake on a regular basis! What a great cake..I used caramel condensed as none of other in cupboard and it bakes a huge cake..did in round tin and yes bakes about 90mins on 170 deg c but worth it and family absolutely love it…so happy to finally find a PERFECT sized sweet moist yummy banana cake..thanks Catty

Yes definitely, in fact that’s how I make them most of the time now π Bake in the oven for less time though – try about 15-20 mins, and just check by inserting the skewer. Once the skewer comes out clean it is done π

Try substituting a little lemon juice instead of orange juice. It’s actually a little less noticeable than the orange.

In fact, I bought some more bananas and I’m waiting for them to slightly over-ripen and I’m going to have another go at it. I might even put a wee bit more condensed milk into the next one and see how that changes the taste. We shall see.

Yesterday i made the banana cake and its simply delicious but i had to cooked it for one hour instead of 40 minutes, but for now i am going to keep this recipe in one of my favourites cakes, thanks for sharing it to us.
hi Catty dear, i made this cake last week Friday and it was a super hit! Thanks for sharing this wonderful recipe π the cake was very moist and not too sweet. Only thing it was too crumbly when i cut the cake. Do you know why? Btw what size eggs to use for this recipe? i used small eggs. And also i added chopped walnuts into the batter.i am wondering if this could be the reason?
I use medium sized eggs but that’s weird that your cake is crumbly. Could be the eggs/walnut cos it’d make the mixture dryer. Maybe try adding another egg next time? Glad it was a hit tho.

Ive baked numerous banana cake recipes however none compares to your Mum’s beautiful recipe, you had me at condensed milk and orange juice…Moist, flavoursome and definitely moorish.
