Can I just say I’m loving this little burst of summer that London has put on over the last few days? It has made coming back to London that much more pleasant and all I want is for this to go on until… forever! But I’ll take it if it lasts until September.

I’ve kicked off my boots and replaced them with sandals. I’ve painted my toes (as best as I can since I still can’t properly reach the toes on my right foot) and have even waxed my legs. It’s time to shine, my little babies because knowing London? This surreal forecast for a S.T.U.N.N.I.N.G. weekend will not last forever.

Anyway, this warm weather has made me feel like I should be eating a whole bunch of salads, and I was chopping up a cucumber yesterday when I thought, why not pickle it? WHY NOT INDEED! And so I did, because I also have the most ridiculously easiest pickle recipe you’ll ever come across and it literally took about 5 minutes.

So what’s everyone doing this weekend? The great outdoors will be packed no doubt. I hear there’s some coffee festival going on in Londontown but meh, however there is also a chocolate festival happening down at Southbank! I am SO THERE.

It’s also Panu’s birthday today, and tonight we’re dining at Sketch Gallery. It’s my first “nice” meal out since surgery so it’ll be a test. I think I’ll just have a starter and dessert. Mains are usually over-rated anyway, right?

Pickled cucumber
1 cucumber
180mL cider vinegar
150 grams sugar
1/2 teaspoon salt
  1. Peeling the cucumber is optional. Cut into very thin slices – I used a peeler – and place in a jar or plastic container.
  2. In a small pot, heat the cider vinegar, sugar and salt until the sugar and salt melt. Leave to cool.
  3. When the vinegar mixture is cool, pour over the cucumber, seal the jar/container tightly and refrigerate for 8 hours or overnight.
  4. Done! Remember to keep the lid tightly on as you don’t want everything in your fridge smelling vinegary!
Can be kept for one week.

    I have to admit that when I pickle mine I tend to use the Yuzu to flavour them for the summer. In the winter I use these great pickles sachets from Japan. They work a treat.

    I have recently started pickling mooli too!
