To say that I’m a sucker for marketing would be an understatement. I am a marketer’s dream. I buy things on spur of the moment desires. I see what she has, I want it, I buy it (well, within reason). Sometimes, I even buy stuff because I see the package and I like the package. I don’t even know WTF is inside! It’s ridiculous. So you can imagine how difficult it is for me to have a constant stream of can’t-live-without items flowing through my social media channels and even worse, must-have-right-now foods.

I’m constantly crushing hard on what everyone else is having, while I half heartedly tuck into my own meal (I know, first world problems). But occasionally, I have the ingredients at home to make the same thing and voilร ! Instant gratification to the max.

Earlier this week, Rosa tweeted her kimchijeon lunch. And then guess what I had for lunch! Luckily, I had some kimchi in the fridge (since I discovered the kimchi and quinoa golden combination) and everything else you need is stock standard pantry stuff.

I love it when a plan comes together!

Kimchijeon (kimchi pancake)
1 cup chopped kimchi
3 tablespoons kimchi juice
2 tablespoons chopped onion
5 fish balls, sliced (optional) – I added this for texture, but you don’t need it.
1/2 teaspoon salt
1/2 teaspoon sugar
1 cup plain flour
1/4 water
Olive oil
  1. In a large bowl, mix together kimchi, kimchi juice, onion, salt, sugar, flour and water. Stir together with a wooden spoon until well combined.
  2. Drizzle some oil in a non-stick fry pan and heat. Pour the kimchi batter into the pan and flatten with a wooden spoon.
  3. Let cook for about 90 seconds on one side, until brown. Turn down the heat a little, flip the pancake over (using a spatula) and cook for another 90 seconds. If needed, flip back to the first side for another 30 seconds on low heat.
  4. Remove from heat and serve whole, or cut into smaller pieces.
Serves 1 or served as a shared dish.
