Oatmeal, raisins, walnuts, a touch of brown sugar and cinnamon. Would you eat that for breakfast? I totally would. And if it came in cookie form, well all the better for less washing up!

I always seem to have an abundance of rolled oats sitting around the house. I have good intentions of having it for breakfast but somehow, the pre-packed, flavoured, Uncle Toby’s 90 second oats just flings itself into my shopping basket every week. So with a big tub of oatmeal feeling neglected and gazing longingly at me, what else can I do but turn them into big, fat, delicious chewy cookies?

ps. for the record, Panu the cookie (and cheesecake) connoisseur absolutely loved these, so they’re making it onto my regular baking list.

pps. these cookies probably aren’t actually considered to be a balanced breakfast. sorry.

Chewy oatmeal, raisin and walnut cookies
115g butter, softened
125g brown sugar
1 egg
1/2 teaspoon vanilla extract
95g plain flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups rolled oats
3/4 cup raisins
1/2 cup walnuts, chopped

  1. Pre-heat oven to 175°C/350°F.
  2. In a large bowl, beat together butter, sugar, egg and vanilla extract. In another bowl, mix together flour, baking soda, ground cinnamon and salt.
  3. Mix the dry ingredients into the wet ingredients and stir well with a wooden spoon.
  4. Add the rolled oats, raisins and walnuts and mix thoroughly with a wooden spoon.
  5. On a paper lined baking tray, scoop 1/4 cup mounds of cookie dough, placing them about 2 inches apart. These make quite large cookies, but I like them large 🙂
  6. Bake for oven for 15 minutes or until edges are crusty but the middles are still soft. Remove from oven and let sit for 5 minutes before transferring to a cooling tray. Note that when you first remove the cookies, the middles will feel very soft. This is fine and is what makes the cookies chewy.
  7. If you’re making smaller cookies, reduce the cooking time.
Makes about 12 large cookies.
