Where has the time gone? 2013 has been quite the year for me. We got married (ok, granted that was 27 December 2012 but who’s counting), got pregnant, bought a house and oh hey, we had a baby! As is the common outcome of getting pregnant, I suppose. But in all seriousness, What A Year.

When people tell you that having a baby changes your life, as cliché as it sounds, you really don’t understand what that means until it happens to you. Until recently, my ‘old’ life seemed but a dream – the eating out, the sleeping in, the lazy days, the baking… all of it, a fragment of my imagination. Most of those things (sleeping, lazing, baking) are still but a pipe dream. But lucky for me and my sanity, eating out has turned into a day time routine and soon I hope, one day in the next year perhaps, I’ll get to eat dinner out again.

But still, again clichéd, I wouldn’t swap it for the world. And if it means I can’t bake for a while, so be it. Because my lazy-ass ingenuity can still find super easy recipes to whip up. Like this choc nut muesli slice which is a ‘mix in a big bowl’ recipe and takes about 5 minutes. And it’s healthy to boot!

It’s now five days to Christmas and not many more til we hit 2014. Wishing all my readers, friends and family a wonderful silly season and the best of the best in the new year.

Chocolate nut muesli slice
6 tablespoons dark chocolate chips (meltable)
8 tablespoons nut butter (almond butter, cashew butter, peanut butter etc)
6 tablespoons milk (any kind)
2 teaspoons vanilla essence
2 tablespoons honey
1 1/2 cups oats
1/2 cup dessicated coconut
4 tablespoons chopped walnuts
4 tablespoons dried fruit (eg raison, cranberries etc)
  1. Place chocolate chips, nut butter and milk in a large microwave safe bowl and microwave for 30 seconds. Stir to melt and combine.
  2. Stir in vanilla and honey.
  3. Add all other ingredients and stir to combine.
  4. Line a flat tray with baking paper. Pour contents of bowl on the tray and flatten to 5mm-10mm thickness.
  5. Place in freezer for 10-15 minutes to set, then cut into slices. Store in an airtight container in the fridge.
Makes quite a few slices – depends how big you cut them!
