sticky date muffins

A couple of weeks ago, my friend Mags came over and cooked dinner for Panu and I. She made Cambodian pancakes, which were delicious and I am insanely grateful that anyone would want to come and cook me dinner. But the dinner conversation kind of put me to sleep.

You see, Mags and Panu are healthy people. They live and breathe healthy lifestyles. They eat healthy (well, Panu has a few glitches here and there), they work out and most of all they enjoy it. I know, crazy folk. So dinner conversation was all about that kind of stuff. What exercise to do, how to do it, what to eat and mostly, what not to eat. Which basically is everything I eat. So I pretty much zoned out.

But don’t get me wrong, I love Mags. She has a passion for all the things she does that I envy. She’s an all or nothing girl and right now it’s all health and fitness and well, maybe she does rub off on me a little. For example, she made these amazing sticky date muffins that are – believe it or not – healthy. You heard me right, all 100% natural and good for you. What are you waiting for?

Healthy sticky date muffins
16 Medjool dates, pitted
1 cup water
1/3 cup natural sugar (I used panela which is natural cane sugar)
1 teaspoon bicarb soda
2 tablespoons flaxseed/linseed meal mixed with 4 tablespoons water
1 cup almond meal
1 cup rolled oats
1 tablespoon coconut oil
  1. Preheat oven to 180°C/355°F.
  2. Add dates, water and natural sugar to a saucepan. Let boil and allow the dates to soften. Once soft, add bicarb soda, stir through then turn off the heat.
  3. Add flaxseed/linseed mixture, stir through. Add almond meal, oats and coconut oil and stir through.
  4. Scoop into 12 muffin cases and bake for 25 minutes.
Makes 12 small muffins.

    I love anything date related. Wonder if these would work as a tray bake?
