rocky road

I don’t really make ‘the best’ anything. I make lots of stuff, and mostly it’s good… I think. But the best? Never. Despite being raised by a tiger dad, dare I say I don’t aim for stratospheric awesomeness. I just aim for what makes me happy, and as result I’m not really the best at anything and hence, don’t make the best of anything.

But then. Rocky road.

Recently one of my favourite little people celebrated her first birthday. Her mum planned a beautifully themed party decorated in pink, aqua and light green. Lots of yummies were made, and I was allocated rocky road duty. Lucky for me, Pascall marshmallows are already pink and white. I dyed a few white ones green and made this:

I thought it was a good rocky road but bizarrely so. many. people. kept telling me how awesome they were. At the party, after the party, on Facebook, on Instagram. Two weeks after the party, people were still telling me how good they were. I think the secret is the vanilla sugared almonds I used, which adds a unique hit of sweet and salty that just goes really well with the marshmallows and white chocolate.

I’ve made them twice since and they’re still a hit. And all you need is three ingredients and oh, five minutes. I kid you not.

Sometimes, good things in life are just that simple.

ps. if you want to know how to dye marshmallows, ping me. That took longer than making three batches of rocky road combined.

White chocolate rocky road
500g white chocolate (I use Lindt Excellence)
250g marshmallows (I use Pascall pink and white)
200g vanilla almonds (I use Woolworths Select)
(Note that for the party, I also included strawberries & cream lollies, but haven’t included them since. I don’t think they’re necessary.)
  1. Line a 30 x 30cm tray with grease proof paper.
  2. Break the white chocolate in a large bowl and place over a boiling pot of water. Stir until completely melted.
  3. Remove from heat and immediately add marshmallows and almonds. Mix well.
  4. Poor onto tray and spread out evenly. Let cool slightly before completely chilling in the fridge.
  5. When the chocolate is set, cut into rough pieces.
Makes… a lot. Depending on the size you cut.

  1. looks so good. am thinking of making these for keira’s class but replacing the almond with dried fruits – raisins/apricots – cos of no nuts allowed at school. hope it will still taste good.
