easy three ingredient cookies

With Sam at school five days a week, I now get some quality alone time with Sofi on Fridays, a treat we haven’t had since I was on maternity leave with her. Back then, I spent my Sofi days pretending that I was a first time mum, albeit one who knew what to expect from motherhood, who didn’t stress over routines and nap times, didn’t Dr Google the faintest of any-kind-of imaginary symptom, and basically loved motherhood. We went for walks and went shopping, had long lunches, met friends and had coffee, because having a newborn is easy guys what are you talking about??

Because let’s be real, when I really was a first time mum, I stressed over nap times so bad I think my anxiety prevented Sam from napping properly, I rushed to the hospital umpteen times after Dr Google diagnosed him with every air-borne disease known to man, and really, I didn’t enjoy being a new mum.

But second time round, it’s a piece of cake and haven’t we all thought… if only we were this chill the first time round. 

Anyway, alone time with a child is actually even better than it was with a baby. We can actually spend time doing things we both enjoy, ie not laying on a mat swatting a dangling monkey. Most Fridays we have playdates, and more often than not she also asks to bake. Don’t worry though, I’m not that naive. I know she’s not doing it for that bonding-time bullshit. She’s after the end result but you know what? I don’t mind because I get bonding time and even if she doesn’t know it, I win in the end 😉

So I’m usually prepared to bake on Fridays but for some reason today I was low on supplies. No flour. No eggs. WTactualF is my pantry good for. But I had three ingredients and I dug deep into the recesses of Google and found this gem of a recipe. Thank you The Happy Foodie.

Easy three ingredient shortbread
200g butter
100g caster sugar
300g self-raising flour
1. Pre-heat oven to 160°C/320°F (fan forced).
2. Beat butter to soften. Gradually add in the sugar, then add in the flour.
3. Mix well, and then using your hands knead the batter into a dough.
4. Make small balls with your hands about 3cm across, and gently press down with a fork.
5. Bake in pre-heated oven for 15 minutes.
Makes about 30 cookies.
