pear and cinnamon cake

This is going to be too much info for y’all non-parents but for parents, this is everyday, even dinner, conversation: Sofi does not poop regularly. When they say that once you have kids, you obsess over their shitting and eating, they were not kidding. But as you know, Sofi has that eating side sorted (see #sofieatingface) so it’s just the former I have to worry about.

She eats prunes, several a day. And sultanas. She takes Parachoc (doesn’t like Movicol). She eats a tonne of fruit, skin and all, extra fibre packed in as much as possible. And yet, it’s often day four before she’s willing to (after much coercion and bribery) meander, sloth-style, to the toilet, perch upon her throne and push something out. 

Anyway while the kids were with my family over Christmas, my dad got her onto pear juice! She liked it! It didn’t really help her poo but I’ll happily zombie-apocalypes-style stock up on anything that supports this cause. So I bought like, four large cartons of pear juice.

And then she went off pear juice.

No surprise really, right? For anyone who owns a child? We all know this is no surprise.

So now I have a shit-tonne of pear juice. And so here you have it: pear and cinnamon cake.

Pear and cinnamon cake
2 eggs
3/4 cup castor sugar
1 tsp vanilla essence
1/2 cup pear nectar or pear juice
1/2 cup milk
2 cups self raising flour
2 pears, peeled, cored and chopped into small cubes
2 tsp butter
2 tsp white sugar
1 tsp cinnamon
1. Pre-heat oven to 170°C/335°F (fan forced). Line an 8-inch square pan with baking paper and set aside. 
2. Add eggs, castor sugar and vanilla essence to a large bowl and mix with a wooden spoon until combined.
3. Stir in pear juice and milk, and then sift in the flour. Stir until the batter is well mixed.
4. Pour into prepared tin, sprinkle chopped pears across the top and bake for 40 mins.
5. Meanwhile, mix white sugar and cinnamon in a small bowl. Once the cake is cooked – while it is hot, spread butter across the top and sprinkle with sugar-cinnamon mixture.
6. Once done, leave to cool, then cut into small pieces.
Makes up to 16 square pieces.
