Baby, you had me at condensed milk.
I kind of feel like that’s all I need to say about this recipe, except that actually there’s a lot more to say about this recipe. Firstly, it only uses four ingredients. Four! And honestly, you can drop the sugar all together and call it a three-ingredient recipe. Which is actually pretty amazing, considering how delicious these cookies are. And secondly, it’s a no-egg recipe. So hooray for those with egg allergies!
I found this recipe on Oh So Busy Mummy but it’s very similar to something I’ve previously posted here, albeit I turned a simple recipe into this complicated white choc & condensed milk cookies with matcha ganache because clearly
I didn’t have kids I had the time back then.
But anyway I kept it simple this time, added some sprinkles (because who doesn’t love some rainbow sprinkles) and here’s a delicious batch of rainbow cookies! Like my last batch of choc chip cookies, I’ve frozen 2/3 of the dough so I don’t overdose on these because they are really quite moreish and that’s saying something coming from someone who doesn’t even usually go for cookies!
