condensed milk cookies no eggs

Baby, you had me at condensed milk. 

I kind of feel like that’s all I need to say about this recipe, except that actually there’s a lot more to say about this recipe. Firstly, it only uses four ingredients. Four! And honestly, you can drop the sugar all together and call it a three-ingredient recipe. Which is actually pretty amazing, considering how delicious these cookies are. And secondly, it’s a no-egg recipe. So hooray for those with egg allergies!

I found this recipe on Oh So Busy Mummy but it’s very similar to something I’ve previously posted here, albeit I turned a simple recipe into this complicated white choc & condensed milk cookies with matcha ganache because clearly I didn’t have kids I had the time back then.

But anyway I kept it simple this time, added some sprinkles (because who doesn’t love some rainbow sprinkles) and here’s a delicious batch of rainbow cookies! Like my last batch of choc chip cookies, I’ve frozen 2/3 of the dough so I don’t overdose on these because they are really quite moreish and that’s saying something coming from someone who doesn’t even usually go for cookies!

Condensed milk cookies
1/4 cup castor sugar
250g butter, softened
2 1/2 cups self raising flour
200g condensed milk
Any mix-in you prefer (e.g. sprinkles, choc chips, dried fruit)
  1. Preheat oven to 160°C/320°F. Line a baking tray with baking paper.
  2. Beat together the butter and sugar until light and creamy. Add self raising flour and continue to mix. Add condensed milk and mix until all combined.
  3. Stir in your mix-in of choice.
  4. Roll into small balls and bake for 8-10 minutes. Don’t over-bake as the condensed milk will burn. When done, let cool on tray for a few minutes before transferring to a wire rack to cool completely.
Makes about 30 cookies
