I was bitten by the baking bug over the weekend and pumped out two batches of cookies. The first was a soft macadamia and peanut butter cookie, based on this choc chip cookie recipe. The awesome thing about that choc chip cookie recipe is that it’s just a base, and you can add any mix-in you want! Mac & pb is the hubby’s favourite, so it’s also a good thing I baked another set of cookies because he legit ate ALL the mac & pb cookies in 24 hours, seriously.

So, luckily I also baked a batch of my favourite cookies, this oatmeal, raisin & walnut chewy cookie. I love these because it’s really the same as eating breakfast isn’t it? I have oatmeal and raisins on the regular, and I’ve added some walnuts for a measure of good fats.

Guilt-free and delicious, what more could you ask for?

Chewy oatmeal, raisin and walnut cookies
115g butter, softened
125g brown sugar
1 egg
1/2 teaspoon vanilla extract
95g plain flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups rolled oats
3/4 cup raisins
1/2 cup walnuts, chopped

  1. Pre-heat oven to 175°C/350°F.
  2. In a large bowl, beat together butter, sugar, egg and vanilla extract. In another bowl, mix together flour, baking soda, ground cinnamon and salt.
  3. Mix the dry ingredients into the wet ingredients and stir well with a wooden spoon.
  4. Add the rolled oats, raisins and walnuts and mix thoroughly with a wooden spoon.
  5. On a paper lined baking tray, scoop cookie dough, placing them about an inch apart.
  6. Bake for oven for 15 minutes for large cookies, 12 minutes for small, or until edges are crusty but the middles are still soft. Remove from oven and let sit for 5 minutes before transferring to a cooling tray. Note that when you first remove the cookies, the middles will feel very soft. This is fine and is what makes the cookies chewy.
Makes about 12 large cookies, 20 small cookies
