Happy Easter, everyone! Wow, I don’t even know where to begin with this post. I could just ignore all the crazy that’s going on and be like hey guys, how cute are these meringue kisses?? Or I could open the floodgates to all the thoughts I have about this situation – from the actual disease, to the number infected and number of deaths, our economy, our hospitality and arts friends, to the essential workers and frontline staff who put everything on the line every single day, to isolation and home schooling and our collective loss of sanity, to cancelled birthday parties and much anticipated holidays, to goddamn virtual funerals and new babies who can’t be cuddled, to heart break and tears and hope and unity and for once in history, we as one are all in the same boat, all battling the same enemy.

I don’t know if you want me to open those floodgates.

But I do want to say this: we’re all fighting our own battles. Some are worse off than others, but you have the right to feel the way you feel. Whether you’re dealing with unemployment or someone close to you is affected by the virus, or simply losing your marbles because you’re trying to manage restless children while working at home, you’re allowed to feel overwhelmed, helpless, confused and downright sad. While we pull together to support our community and those around us (and do that if you are able and willing) just because your situation may not be as heart breaking as another doesn’t take away from the fact that you are entitled to feel the way you do. We’re all affected, we’re all in this together, this is not a time for judgment.

Ok, that’s all I’ll say on that.

On another note, it’s Easter and a particularly sad one for us. For the first time in six years, we’re not spending Easter with our cousins up north. The kids are devastated and all we can promise is a mind-blogglingly-extra-awesome holiday with the cousins once we are allowed again.

In happier news, Sofi and I made meringue kisses yesterday! This super easy recipe is completely mini-baker friendly and the results are adorable! 

Meringue Kisses
2 egg whites
1/2 cup castor sugar
1 tsp vanilla essence
Food colouring and sprinkles optional
 
1. Pre-heat oven to 150°C/300°F (fan forced). Line a flat baking tray with parchment paper and set aside. 
2. Whisk eggs until soft peaks form.
3. Slowly add in sugar and keep whisking until firm peaks form.
4. Gently fold in vanilla essence.
5. If you’re making different colours, split into batches, add a drop of colour and gently fold in.
6. Scoop teaspoon amounts of the mixture onto the parchment paper and add sprinkles if desired
7. Bake in pre-heated oven for 30 minutes. IMPORTANT: once done, turn off the oven but let the meringues cool IN THE OVEN, otherwise they will collapse.
Makes about 30-50, depending on the size of your meringues.
